讓大腦充分吸收葡萄糖！牛奶這時喝，穩血糖又補鈣
【早安健康／曾啟翔整理編輯】現代人生活忙碌，一天之中最重要的早餐都選擇在路邊的早餐店、超商、速食解決，沒有時間在家享受一份營養充足的早餐，更甚者有些人幾乎不吃早餐。晚餐吃多，早餐不吃的壞習慣，就是造成糖尿病問題日益嚴重的主因之一。
既然早餐如此重要，那我們應該要怎麼吃呢？早餐其實是血糖相對較低的一個階段，極需能量的補充，尤其是我們腦中所需的營養只有葡萄糖能進入，因此早餐應攝取全榖根莖類和牛奶，其中的醣份，能分解成葡萄糖讓腦袋使用。
此外牛奶中的鈣質也是人體必需的營養素，不過需要注意的是，請不要把牛奶當水喝，隨時隨地就來一杯，很容易造成熱量攝取過量，但如果當成早餐，除了能補充能量外也不易形成脂肪。
熱量高但不形成脂肪的牛奶
許多人可能會認為牛奶熱量過高，為了減肥，所以不願意喝牛奶，然而法國、美國、韓國曾做出過一些研究指出，當奶製品增加時，腰圍、體重、血壓、血糖反而保持在正常範圍。
他們認為，原因很有可能是豐富的鈣質調節了血漿中的維生素D，降低活化合成脂肪酸的基因，並增加脂肪分解。
牛奶中的胜肽具有抑制血管收縮素轉化酶，有讓血管放鬆的功效。因此一些預防高血壓的飲食中，也會建議每日要攝取一些奶製品，而其中含有的支鏈胺基酸，可以增加飯後胰島素的分泌，降低血液中的葡萄糖。
營養師建議，每日1～2杯240毫升左右的牛奶、優酪乳等製品，有益降低新陳代謝症候群發生率。
患有乳糖不耐症的人還是應要注意攝取量，或者可以選擇發酵過後乳糖較少的優酪乳替代，此外對牛奶過敏的人，可以選擇含鈣的食物，像是南瓜、洋蔥、豆漿、芝麻等。
早餐食譜建議
黃豆健康玉米片
材料：玉米片1/2杯、牛奶1/2杯、黃豆粉3大匙
做法：將玉米片盛入容器裡，倒入牛奶，撒上黃豆粉。
鮪魚三色沙拉
材料：涼拌紅蘿蔔絲40公克、罐裝鮪魚30公克、美乃滋一匙、鹽巴一小撮、少量黑胡椒、美生菜1～2片
做法：
１、 鮪魚跟美乃滋、鹽、黑胡椒攪拌均勻。
２、 將生菜洗淨，撕成適量大小。
３、 將上述東西跟涼拌紅蘿蔔絲一起盛入容器。
